The so-called koji, the main ingredient is Aspergillus, and the spores of yeast. There are several types. In an aerobic environment, sugars can be decomposed into alcohol. It can be said that because of these magical anaerobic bacteria, drinks like wine are available.

Xu Ming bought four different wine koji in the past two days, but I don’t know if there will be any difference in the wine brewed.

Step 4: Store the sealed wine barrel in a cool underground wine cellar, ferment and wait for it to become wine.

This fermentation process usually takes only one or two weeks to make most of the sugar in the juice decompose into alcohol by anaerobic bacteria. If it is some private rice wine brewing workshops, it is estimated that the rice wine will be brewed in one week.

But if the time is so short, a small amount of sugar will not be decomposed, and there will be some particulate residues, and the fermentation will not be thorough enough.

If you want to pursue pure taste, clear color and very little residue, the longer the brewing time, the better!

Take red wine as an example.

Half a year is the bottom line.

It's barely available in a year.

Three years or five years are excellent quality products.

Ten years or more than twenty years, it is the best among the best products and can sell higher value.

This is a drink that can add value over time. Even if the year is longer, the marginal effect will decrease, and the quality of the wine will be limited.

But "the longer the time, the better the quality" is the truth.

This time, Xu Ming picked more than 15,000 kilograms of crystal red pickles. After pressing and filtering, the juice obtained was still more than 10,000 kilograms, and then added wine koji and water, and the total weight was still about 12,000 kilograms.

The volume is more than 600 liters.
